Richard Shackelford

Director of Dietary Services

Richard Shackelford is married to Libby DeLaune of Denham Springs, Louisiana and they have two children, Elizabeth and Grant. Richard is a voice graduate of the LSU School of Music.

Upon graduation, Richard and his wife worked as professional actors in traveling Broadway shows spending many years on the road before settling down in Omaha, Nebraska. While in Omaha, they purchased and ran the Dundee Dinner Theatre and managed a local bistro. Richard honed his cooking skills at the bistro under the owner/chef and applied his knowledge as the chef of the dinner theatre.

After 10 years in Omaha the couple returned to Gonzales, Richard’s hometown, and opened Starlite Espresso Café located on Burnside Avenue. The 2000 square feet facility offers gourmet coffee drinks, bakery items and a full breakfast and lunch menu.

Richard’s 30 years of restaurant experience brought him to Francois Bend and presented a new and exciting level in his career. As the Director of Dietary Services, his excited to develop and grow the dining experience for the residents of Francois Bend Senior Living.

Jacquelene A.”Jackie” Gainor

Executive Chef

Jackie is a native New Orleanian. Born in central Louisiana, she moved to New Orleans in 1955 where she enjoyed a 26 year-long culinary arts career in major health care facilities, including two major hospitals—Ochsner and Hospital Corporation of America (“HCA”). She achieved the title of Executive Chef in 1983 at the (“HCA”) hospital and continued in that role at a Senior Living Facility on the Westbank.

Jackie has been married to Major Dotson for 22 years and they have a daughter who lives in Maryland. Since joining Francois Bend Jackie and her husband have relocated to Gonzales, La.

Jackie’s passion for cooking, teaching, and love of seniors makes the perfect recipe to provide wonderful food and an infectious smile that lights up our residents every day.
